Tasting notes

Dark garnet colour. Ripe red fruit, black cherry, blackberry, cassis, spice, grilled and vanilla notes. Full, smooth palate with rounded, complex tannins.

Food pairing

Lamb, grilled meats, Mediterranean dishes, stews, sauced meats and mature cheeses.

Grapes: Syrah, Grenache Noir, Mourvèdre
Terroir: Clay-sandstone soils with sandstone pebbles
Pruning: Cordon de Royat for controlled yields
Yield: Around 25 hl/ha for Syrah, 30 hl/ha for Grenache
Winemaking: Parcels and grape varieties are vinified separately in small vats, fully destemmed, with a long traditional fermentation, punch-downs and pump-overs early on, then gentler handling as needed.
Ageing: 12 months in French oak barrels, with selection of the best barrels
